  • 1/2 of a small onion (red or white)
  • 1 juiced lime
  • 2 ripe avocados (large)
  • a handful of coriander (finely chopped)
  • salt (to taste)
  • pepper (to taste)
  • 1/2 tablespoon of olive oil

Step By Step

Step 1: Prepare The Guac

Firstly, you’ll need to grab a chopping board and finely chop half of a small onion. Once chopped, add the onion to a bowl. Now add around half of your juiced lime and mix well. Leave to one side. Now grab the avocados and cut them in half. Remove the stones from the center of each avocado and remove the avocado flesh by scooping it from the skin. Now chop your avocado into smaller pieces and mash using something straightforward like a fork.

Step 2: Serve The Guac – Guacamole Recipe Without Tomatoes

Once your avocado is mashed, add the onion (with the lime juice), along with the coriander, salt and pepper. Stir to combine the ingredients together, and add some of the extra lime juice if needed. At this point you can add the olive oil gradually if you feel as though the consistency needs it. Give one final mix and your guac is ready to serve as a dip. Enjoy!

I feel as though this post wouldn’t be complete without homemade tortilla chips and salsa. And they’re both super easy! So let’s take a look at how to make them, to ensure you have the perfect chips and dips. This recipe is inspired by one from BBC Good Food.

Ingredients

For the tortilla chips:

  • 3 tablespoons of vegetable oil
  • 12 corn/wheat tortillas

For the tomato salsa:

  • 6 tomatoes (halved)
  • 2 jalapeno chillies
  • 8 garlic cloves
  • 1/2 red onion (diced)
  • 2 tablespoons of coriander
  • juice of 1 lime
  • 1 tablespoon of chipotle paste

Step By Step

Step 1: Make The Tortilla Chips

Preheat your oven to 200C. Whilst the oven is preheating, brush all your tortillas (both sides) with your oil and then cut into triangles (with scissors or a knife). Place onto a baking sheet in a single layer and place in the center of your preheated oven. Cook for around 7-8 minutes. Remove from oven and season with salt

Step 2: Make The Salsa

Place your tomatoes into the grill, with a sprinkle of salt, and leave until blacked (around 15 minutes). Add the chilies and garlic to a pan and blacken for around 10 minutes. Once darkened, peel the garlic and add to a food processor. Steam the chillies in a bag for several minutes and then peel and deseed them, and add the flesh to the food processor too. Now add your tomatoes, lime juice, onion, coriander and paste. Blitz until you’ve reached the consistency you desire. Enjoy!
