Chef Signature Lobster And Shrimp Pasta Recipe

Lobster and shrimp pasta is a heavy seafood dish that is made using either full lobster legs or shredded slices of lobster and shrimps. These types of pasta dishes are very popular in coastal towns and states where lobsters and shrimps are abundant in the water.

Equipment

Ingredients
  

  • 2 Tbsp Olive Oil
  • 1 teaspoon of sea salt
  • 1 teaspoon of garlic powder
  • 1/2 pound of Shrimp
  • 2 Lobster Tails about 6 oz
  • 1/4 pound of Sliced Mushrooms
  • 2 Tbsp Green Onions for garnish
  • 1/2 pound of fettucini or angel pasta- cooked
  • 2 Tbsp Fresh Parsley

Ingredients for the Cream Sauce:

  • ΒΌ cup of White Wine
  • 4 threads of Saffron
  • 3-4 basic leaves
  • 1 teaspoon of dried Thyme
  • 2 lobster shells
  • 1 cup of Heavy Cream
  • 1/3 cup of Chicken Broth
  • 1.5 tsp Cornstarch
  • 1 tablespoon of water
  • 2 Tbsp Brandy optional. For those of us who do not drink or cook with alcohol you can substitute the wine and the brandy for red vinegar.
  • 2 cloves of garlic minced

Instructions
 

  • Before you prepare the seafood meat, it is important to prepare the sauce. In a pot or pan, gather the ingredients and slowly add them in, whisking and stirring as the cream sauce simmers. Set the stove top heat to a medium-low or medium-high. The cornstarch is the last ingredient in the cream sauce, as this will thicken it.
  • Cooking the lobster takes practice, skill, and time. To cook a lobster, you will need to add olive oil, butter, and seasonings to a large pot. Make sure that you use the shears to take out the lobster tail shell. Once the shell is gone, add it to the creme sauce to soak in the flavor. Simmer the lobster meat for 2-5 minutes.
  • While you cook the shrimp and lobsters, start boiling the pasta with water, a boiling pot, and a small splash of olive ol and salt. Sear the shrimp and move it around in the large pot until the shrimp changes to a bright shade of pink.
  • Now that the cream and the seafood is complete, add them together. It is easier to pour the sauce and the seafood bits into the large pot with pasta. Mix thoroughly using a whisk or large spoon.
  • In about 5-10 minutes, the dish will be cool enough to enjoy! Serve, and store the rest in an air tight container.

Notes

  • There are not a lot of tips or tricks to provide readers, since this recipe is simple. However, for those that struggle to cut the tough lobster meat and shells, I recommend purchasing sliced and diced lobster meat. Always follow the instructions on the bag.
