During the first step in this delicious recipe, you will need to properly prepare the ingredients. This includes cleaning and drying the greens, while also peeling the beet. If it is easier, you can also chop the nuts and the goat cheese. Set both aside for later.
The biggest part about this dish is the roasted beets. In order to cook the beets properly, you will need to add olive oil to a pan. Sear the beets lightly with a splash of your desired seasoning. I personally only add sea salt as beets already have their own unique flavor and color adding a pop to your dish!
You can't have a proper salad without the greens. While arugula is the most commonly used green, you can also add other types of lettuce. Clean the greens, dry them, and cut them if you need to.
To add another extra layer of flavor and acidic tones, I also recommend making your own vinaigrette or dressing. You can do this by mixing vinegar, sea salt, olive oil, and the lemon juice or freshly squeezed lemons. Mix until the vinagrette is fragrant.
The last step is optional, but I think it is what ties this dish together so well! Add the toppings as desired, including the chopped nuts and the sprinkles of goat cheese crumble.
