What Is A Tri-Tip?

A tri-tip is a triangular roast or steak that comes from the bottom sirloin. This steak is also commonly referred to as “Santa Maria” steak as it was made famous in the California town at the annual barbeque festival.

This popular steak is normally around 1 inch thick, lean, and tender. It is preferably cooked at high heat or in indirect heat. The meat is notoriously flavorful but can be incredibly tough to chew if overcooked.

What Is A Traeger?

Trager is a pellet grill that uses indirect heat to cook food. There is a wood pellet hopper that feeds an internal auger to channel pellets into the fire pit located at the bottom of the grill. This pellet grill burns the wood pellets that are made from sawdust and is a popular method of cooking outdoors. The process is consistent as the continuous feeding of wood pellet to the grill allows for a controlled and consistent fire for consistent cooking.

Invented over 30 years ago in Mt. Angel, Oregon, Traeger the is the original wood pellet grill. The brand has surpasses others as the #1 selling wood-fired grill, as they continue to master their craft and stay up to date on new technology and advanced processes.

What Does Slicing Against The Grain Mean?

“Grain” refers to the muscle fibers that run within the meat, in this case, steak. When cutting against the grain, this helps make the meat easier to chew as it is more tender. This reference “cut across the grain” or “slice against the grain” is a common culinary term that refers to this process used to prepare steak when serving it.

Finding the grain is more noticeable in skirt, flank, flat iron, and hanger steaks. These tougher meats have less fat and more defined, long muscle fibers known as “the grain”. When slicing against the grain, or the long muscle fibers, in these steaks, it shortens the muscle fibers to incorporate a more tender and chewy steak.
